The air is sucked out of the container, so the air pressure decreases. As the air pressure in the container is lower than the atmospheric air, the atmospheric air pushes on the lid and the lid is stuck.
As the pressure in the container decreases, the water boils. The low pressure in the container results in the atmospheric air acting on it, and the lid becomes hot.
